Lunch

  
Refried beans, cheddar cheese, taco rice (brown rice with home made taco seasoning), wilted spinach, salsa and sour cream. I usually use plain yogurt, but all I have is vanilla… So.. sour cream it was, all on a low carb tortilla. Not completely clean, but not pizza.  Yay.  🙂

  1. Jen…Stuart is a master with the low carb tortillas…..For instance, he takes one and puts butter and cinnamon on it with some spray Splenda…..roll it up….cut the rolls and so good!!! Also, he takes one and cuts it into thin strips and uses that as a ‘faux’ spaghetti!! Haven’t tried it myself yet, but if he approves of it, then I’m sure it’s good!! Just a couple ideas!!
